Buffalo Chicken Zucchini Boats {Keto-Friendly}

The perfect weeknight dinner. Ground chicken combined with Insta-Meal Tangy Buffalo and cheese makes this meal quick and delicious. No side dish needed just eat your tasty zucchini boat!


Ingredients:

  • 8 small-medium zucchini

  • 1 tsp oil of your choice

  • 2 lb ground chicken

  • 1 bottle Insta-Meal Tangy Buffalo sauce

  • 1 cup crumbled blue cheese or shredded mozzarella

Directions:

  1. Preheat oven to 400 degrees.

  2. Using the saute function on your pressure cooker, brown the meat in oil.

  3. Pour bottle of Insta-Meal Tangy Buffalo sauce on top of browned meat. Close lid, set for 8 minutes 8 pressure.

  4. While the meat is cooking, cut the zucchini in half, lengthwise. Scoop out the seeds and center out of each zucchini using a spoon. Leave 1/4 inch thickness in the zucchini boat. Place zucchini boats in a 9x13 .

  5. When the chicken is done cooking, quick release pressure. Spoon cooked chicken into the boats, evenly distributing. Sprinkle chicken with cheese.

  6. Cover baking dish and bake for 15 minutes. Uncover and bake an additional 5-10 minutes or until cheese is browning and zucchini is tender.
