Pressure Cooker Buffalo Chicken Meatballs

Combining your favorite flavors these buffalo chicken meatballs have it all. Ready to take it to the next level? Try stuffing them with blue cheese!


  • 1 1/2 lb. ground chicken

  • 1 large egg

  • 1 12 oz. bottle Insta-Meal Tangy Buffalo Sauce, DIVIDED

  • 3/4 cup panko bread crumbs

  • 1/2 1 oz package of ranch dressing mix you will only use 1/2 the package (make ranch dipping sauce with the other half)

  • 1/3 cup celery, minced

  • 2 scallions, finely chopped

  • 2 plump garlic cloves, minced

Topping options: blue cheese crumbles, celery, parsley, ranch dressing, blue cheese dressing


  1. In a large bowl lightly mix all the meatball ingredients together forming ping pong sized meatballs, you will have 20-24 meatballs.

  2. This step is optional- Set pressure cooker to saute mode and once it reads HOT saute/brown the meatballs in 3-4 batches, adding about 1 tablespoon of olive oil to the pot with each batch. (This step adds a little extra flavor to the meatballs, but is not completely necessary)

  3. Turn off saute mode.  

  4. Before moving on, scrape up any browned bits from the bottom of the pot and discard. This will prevent any "burn warnings"

  5. Pour half the bottle of Insta-Meal Tangy Buffalo Sauce into the empty pot. Lay the raw or browned meatballs in the the pot in 2 layers. Then pour the remaining Insta-Meal sauce over the meatballs. 

  6. Close the lid and lock the pressure vent to "seal". Set the pot to pressure cook mode, on high, for 12 minutes. 

  7. When cooking is complete do a quick release of the pressure. 

  8. Stir the meatballs into the sauce and let them sit (with the lid off, and the pot off) for an additional 10 minutes. This will allow the meatballs to soak in more of the yummy buffalo sauce!

  9. Serve with the extra tangy buffalo sauce from the pot drizzled over the top, blue cheese crumbles and ranch dressing, a side of celery is good too.

Note: To make these STUFFED Buffalo Chicken Meatballs, buy a 2-4 oz. wedge of blue cheese and when you form the meatballs simply add a 1/2-1 tsp of blue cheese to the center of each meatball. 

These also make GREAT Buffalo Chicken Meatball Sliders! Place one or two meatballs on a slider bun, add blue cheese crumbles and ranch dressing.
